At Bigelow Gulp, we believe the finest things are made slowly — with intention, with care, and with ingredients you can trust. From our oven to your table.
Bigelow Gulp began as a quiet conviction: that the bread on your table should be worth savoring. What started as small-batch baking in a home kitchen has grown into a beloved neighborhood destination on East Francis Avenue — a place where regulars know their usual by name and where the smell of freshly baked sourdough is the neighborhood's morning signal.
We source from regional mills and local farms whenever possible. Our flour arrives stone-ground. Our fruits come in season. Our butter is cultured. These choices cost more and take more time, but they make a difference in every bite — and we refuse to compromise on either.
Every item on our shelves is selected or crafted with the same standard we'd hold at our own table.
Sourdough, ciabatta, focaccia, and seasonal specialty loaves — all leavened naturally and baked fresh each morning in small batches.
Flaky croissants, fruit tarts, danishes, and seasonal cakes made with cultured butter and real vanilla. Our display case changes with the seasons.
A curated selection of pantry essentials — small-batch preserves, olive oils, flours, spices, and regional products from Pacific Northwest producers.
Celebration cakes, wedding tiers, and special-order loaves — designed with you and baked to your specifications with advance notice.
From pumpkin spice loaves in autumn to gingerbread and stollen through the winter holidays — we mark the calendar with what the season calls for.
Locally roasted coffee, specialty teas, and fresh juices — the right companions for your morning bread or afternoon pause.
We don't rush fermentation. We don't use improvers or shortcuts. Our sourdough cultures are decades old — fed, rested, and tended the way they always have been. The result is a crumb structure and flavor depth that no commercial process can replicate.
Every morning at 4 a.m., our bakers arrive. By sunrise, the first loaves are out of the oven and on the shelf. That's the rhythm we keep — and it's the rhythm you taste.
We're located in the heart of East Spokane, just off Francis Avenue. Stop by for a loaf, a coffee, or both.
